Produced by WakkaAgri, which is committed to pesticide-free, natural cultivation, these carefully crafted kirimochi rice cakes are made from 100% brown rice of “Shirakemochi,” a legendary glutinous rice variety passed down through the generations in rural Nagano.
The name comes from the fact that the long, slender spikes look like white hair, and these long spikes are highly valued and are used to make the sumo ring for the Kyushu Grand Sumo Tournament every year.
As an indigenous variety, production is low and it is vulnerable to typhoons, making it difficult to grow, making it not widely available. However, its flavor and stickiness are completely different from regular mochi rice!
Compared to rice cakes made from white rice, it is less sticky but has a fragrant, rich flavor.
