Kuroto is a brown rice miso made exclusively from naturally grown brown rice and soybeans, cultivated without the use of pesticides or chemical fertilizers.
Created as “miso for people who eat brown rice, by people who eat brown rice,” this miso is especially recommended for those who follow macrobiotic and whole-food–based lifestyles.
For fermentation, we use our own house-cultured koji mold, carefully preserved and propagated in the brewery over generations.
The salt is sun-dried lake salt from Mongolia, a natural rock salt known for its mild yet complex mineral profile.
